Stroganoff

Ingredients:
  • 1 pound ground beef
  • 1 cup chopped onion
  • 1/2 cup chopped green pepper (optional)
  • 1 cup fresh mushrooms, or 8 ounces canned sliced mushrooms (optional)
  • 10 ounces canned cream of mushroom soup
  • 12 ounces canned evaporated milk
  • up to 1 cup of water
  • 16 ounces wide egg noodles, or 3 cups rice
  • salt and pepper to taste
Directions:
  1. Prepare noodles or rice according to package directions.
  2. Brown beef together with onion and (fresh mushrooms) in deep skillet over medium to medium high heat.  Add green pepper the last minute of cooking.  Drain if necessary.  
  3. Add soup, milk, and (canned mushrooms) and mix well.  Simmer over low heat about 10 minutes.  Add water as needed to reach desired consistency.
  4. Serve sauce over or mixed into noodles/rice.
