Ingredients:
- 2 Tablespoons olive oil
- 2 chicken breasts, cubed
- 4 medium potatoes, cubed
- 16 ounces frozen mixed vegetables (peas, carrots, green beans)
- 10 ounces canned cream of chicken soup
- 1 soup can water
- Heat olive oil in a skillet over medium-high heat. Add chicken and cook 4-5 minutes (won't be completely cooked).
- Add potatoes, vegetables, soup and water, making sure that liquid covers everything for the most part. Bring to a boil, then cover and simmer over medium-low heat for 30 minutes, stirring occasionally.
- I imagine this would work well in the crock pot.
- This would be a great chicken pot pie filling.
