Chicken Stew

Ingredients:
  • 2 Tablespoons olive oil
  • 2 chicken breasts, cubed
  • 4 medium potatoes, cubed
  • 16 ounces frozen mixed vegetables (peas, carrots, green beans)
  • 10 ounces canned cream of chicken soup
  • 1 soup can water
Directions:
  1. Heat olive oil in a skillet over medium-high heat.  Add chicken and cook 4-5 minutes (won't be completely cooked).
  2. Add potatoes, vegetables, soup and water, making sure that liquid covers everything for the most part.  Bring to a boil, then cover and simmer over medium-low heat for 30 minutes, stirring occasionally.
My Notes:
  • I imagine this would work well in the crock pot.
  • This would be a great chicken pot pie filling.
