Pumpkin Cake

Ingredients:
  • 4 eggs
  • 1 cup vegetable oil
  • 16 ounces canned pumpkin
  • 1 2/3 cups granulated sugar 
  • 2 cups all-purpose flour
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 ounces cream cheese
  • 1/2 cup butter
  • 1 teaspoon vanilla
  • 2 cups powdered sugar
  • mini chocolate chips
  • cooking spray
Directions:
  1. Preheat oven to 350 degrees.  Grease cookie sheet with cooking spray.
  2. Blend together the eggs, oil and pumpkin.  Then add sugar, flour, cinnamon, salt and baking soda and beat until creamy.
  3. Pour onto cookie sheet and bake for 20-25 minutes.  Cool completely.
  4. Cream together the cream cheese, butter and vanilla.  Then add powdered sugar and mix well.
  5. Frost cooled cake, then sprinkle with mini chocolate chips.
