Ingredients:
- 1 pound ground beef
- 2 cups chopped onion
- 1 1/2 cups chopped bell pepper
- 14 ounces canned petite diced tomatoes
- 3/4 cup picante sauce
- 2 cloves garlic, minced
- 2 Tablespoons cumin
- 30 ounces canned black beans
- 12, 6" tortillas
- 2 cups shredded monterey-jack cheese
- cooking spray
- diced tomatoes (optional)
- diced onion (optional)
- sour cream (optional)
- shredded lettuce (optional)
- sliced black olives (optional)
- In pot, brown beef together with onion. Drain if needed. Add bell pepper, canned tomatoes, picante sauce, garlic, cumin, and black beans. Heat through.
- Preheat oven to 350 degrees. Grease 9x13 glass baking dish with cooking spray.
- Put a little of the hamburger mixture in bottom of dish, then layer; a) tortillas b) hamburger mixture c) cheese. Repeat layers. You should get at least 2 layers.
- Bake for 30 minutes.
- Great without ground beef too!
