Black Bean Casserole

Ingredients:
  • 1 pound ground beef
  • 2 cups chopped onion
  • 1 1/2 cups chopped bell pepper
  • 14 ounces canned petite diced tomatoes
  • 3/4 cup picante sauce
  • 2 cloves garlic, minced
  • 2 Tablespoons cumin
  • 30 ounces canned black beans
  • 12, 6" tortillas 
  • 2 cups shredded monterey-jack cheese
  • cooking spray
  • diced tomatoes (optional)
  • diced onion (optional)
  • sour cream (optional)
  • shredded lettuce (optional)
  • sliced black olives (optional)
Directions:
  1. In pot, brown beef together with onion. Drain if needed.  Add bell pepper, canned tomatoes, picante sauce, garlic, cumin, and black beans. Heat through.
  2. Preheat oven to 350 degrees. Grease 9x13 glass baking dish with cooking spray.
  3. Put a little of the hamburger mixture in bottom of dish, then layer; a) tortillas b) hamburger mixture c) cheese. Repeat layers. You should get at least 2 layers.
  4. Bake for 30 minutes.

  • Great without ground beef too!
