Ingredients:
- 1 cup uncooked rice
- 1 teaspoon butter or margarine
- 2 cloves garlic, minced
- 1 teaspoon + 1 Tablespoon freshly squeezed lime juice
- 15 ounces canned chicken broth
- 1 cup water
- 2 teaspoon granulated sugar
- 3 Tablespoons chopped fresh cilantro
- In a saucepan combine rice, butter, garlic, 1 teaspoon lime juice, broth and water. Bring to a boil.
- Cover and cook on low 15-20 minutes, until rice is tender. Remove from heat.
- In a small bowl combine 1 Tablespoon lime juice, sugar and cilantro. Pour over hot cooked rice and mix in as you fluff the rice.
- To make pork salad, layer: 1) tortilla, 2) shredded cheddar cheese, 3) "Just Like" Cafe Rio's Cilantro-Lime Rice, 4) black beans, 5) "Just Like" Cafe Rio's Sweet Pork, 6) lettuce, 7) pico de gallo, 8) guacamole, 9) sour cream, 10) tortilla strips, 11) parmesan cheese and 12) "Just Like" Cafe Rio's Creamy Tomatillo Ranch dressing or 12) "Just Like" Cafe Rio's Cilantro-Lime Vinaigrette dressing
