"Just Like" Cafe Rio's Cilantro-Lime Rice

Ingredients:
  • 1 cup uncooked rice
  • 1 teaspoon butter or margarine
  • 2 cloves garlic, minced
  • 1 teaspoon + 1 Tablespoon freshly squeezed lime juice
  • 15 ounces canned chicken broth
  • 1 cup water
  • 2 teaspoon granulated sugar
  • 3 Tablespoons chopped fresh cilantro
Directions:
  1. In a saucepan combine rice, butter, garlic, 1 teaspoon lime juice, broth and water. Bring to a boil.
  2. Cover and cook on low 15-20 minutes, until rice is tender. Remove from heat.
  3. In a small bowl combine 1 Tablespoon lime juice, sugar and cilantro. Pour over hot cooked rice and mix in as you fluff the rice.
