Ingredients:
- 2 pounds pork rib roast
- 36 ounces+ Coca-cola (NOT diet)
- 1/4 cup + 1 cup brown sugar
- dash garlic salt
- 1/4 cup water
- 4.5 ounces canned sliced green chilies
- 8 ounces canned red enchilada sauce
- cooking spray
- Put the pork in a heavy duty Ziploc bag, add 6 ounces Coca-cola and 1/4 cup brown sugar and let marinade for a few hours or overnight.
- Grease slow cooker with cooking spray.
- Drain marinade and put pork, 6 ounces Coca-cola, garlic salt and water in slow cooker. Cook on high for about 3-4 hours, or until it shreds easily. Don't let it get too dry.
- Remove pork, drain any remaining liquid, shred and return to (newly greased with cooking spray) slow cooker.
- In a food processor or blender, blend 6 ounces Coca-cola, chilies, enchilada sauce and 1 cup brown sugar. If it looks too thick, add more coca-cola little by little. Pour over shredded pork in slow cooker and cook on low for 2 hours.
- To make pork salad, layer: 1) tortilla, 2) shredded cheddar cheese, 3) "Just Like" Cafe Rio's Cilantro-Lime Rice, 4) black beans, 5) "Just Like" Cafe Rio's Sweet Pork, 6) lettuce, 7) pico de gallo, 8) guacamole, 9) sour cream, 10) tortilla strips, 11) parmesan cheese and 12) "Just Like" Cafe Rio's Creamy Tomatillo Ranch dressing or 12) "Just Like" Cafe Rio's Cilantro-Lime Vinaigrette dressing
