From: Idahoan
- 4 ounces (1 package) Idahoan Roasted Garlic Mashed Potatoes, dry
- 2 pounds halibut fillets
- canola oil
- salt and pepper
- 1 lemon
- Cut halibut fillet into 4 pieces (8 oz portions). Lightly salt and pepper.
- Empty contents of Idahoan Roasted Garlic Mashed Potatoes on large plate. Coat fillets liberally, gently pushing into fillets.
- In large saute pan, preheat a generous amount of canola oil, on medium heat.
- Gently place the halibut in pan when the oil is hot, careful not to splash. Saute fish until golden brown, about 2 to 4 minutes. Turn fillet and reduce heat to medium-low. Cover pan and let saute until done (flaky) about 8 to 12 minutes. Remove from heat.
- Serve with lemon wedges.
- I have used the roasted garlic and red pepper mashed potato mix and it turns out delicious.
