Roasted Garlic Halibut


From: Idahoan
Ingredients:
  • 4 ounces (1 package) Idahoan Roasted Garlic Mashed Potatoes, dry
  • 2 pounds halibut fillets
  • canola oil
  • salt and pepper
  • 1 lemon
Directions:
  1. Cut halibut fillet into 4 pieces (8 oz portions). Lightly salt and pepper.
  2. Empty contents of Idahoan Roasted Garlic Mashed Potatoes on large plate. Coat fillets liberally, gently pushing into fillets.
  3. In large saute pan, preheat a generous amount of canola oil, on medium heat.
  4. Gently place the halibut in pan when the oil is hot, careful not to splash. Saute fish until golden brown, about 2 to 4 minutes. Turn fillet and reduce heat to medium-low. Cover pan and let saute until done (flaky) about 8 to 12 minutes. Remove from heat.
  5. Serve with lemon wedges.
My Notes:
  • I have used the roasted garlic and red pepper mashed potato mix and it turns out delicious.
