Tortellini Soup

Ingredients:
  • 1 pound sausage or ground beef
  • 1 cup chopped onion
  • 4 teaspoons (4 cubes) beef bouillon
  • 3 carrots, chopped
  • 4 cups water
  • 1/2 teaspoon oregano
  • 8 ounces canned tomato sauce
  • 30 ounces canned petite diced tomatoes
  • 1 zucchini, chopped
  • 1 bell pepper, chopped
  • 1/2 teaspoon basil
  • 1/2 teaspoon parsley
  • package refrigerated tortellini
  • parmesan cheese (optional)
  • cooking spray
Directions:
  1. Grease slow cooker with cooking spray.
  2. In skillet, brown sausage together with onion over medium-high heat, pour into slow cooker.
  3. To slow cooker add beef bouillon, carrots, water, oregano, tomato sauce and tomatoes and stir. Cover and cook on low for at least 2-3 hours.
  4. One hour before serving, add zucchini, bell pepper, basil, parsley and tortellini. Serve topped with parmesan cheese.
