Ingredients:
- 1 pound sausage or ground beef
- 1 cup chopped onion
- 4 teaspoons (4 cubes) beef bouillon
- 3 carrots, chopped
- 4 cups water
- 1/2 teaspoon oregano
- 8 ounces canned tomato sauce
- 30 ounces canned petite diced tomatoes
- 1 zucchini, chopped
- 1 bell pepper, chopped
- 1/2 teaspoon basil
- 1/2 teaspoon parsley
- 1 package refrigerated tortellini
- parmesan cheese (optional)
- cooking spray
- Grease slow cooker with cooking spray.
- In skillet, brown sausage together with onion over medium-high heat, pour into slow cooker.
- To slow cooker add beef bouillon, carrots, water, oregano, tomato sauce and tomatoes and stir. Cover and cook on low for at least 2-3 hours.
- One hour before serving, add zucchini, bell pepper, basil, parsley and tortellini. Serve topped with parmesan cheese.
