Perfect Baked Potato

Ingredients:

  • 1 large russet potato
  • vegetable oil
  • kosher salt

Directions:

  1. Preheat oven to 350 degrees and position racks in top and bottom thirds.
  2. Wash potato throroughly with cold water.  Dry well, then poke 8-12 deep holes all over the potato with a fork.
  3. Place in a bowl and coat lightly with oil, sprinkle with salt and place directly onto middle oven rack.  Place a baking sheet on the lower rack to catch drippings.
  4. Bake 1 hour or until skin feels crisp, but flesh soft

My Notes:

  • If cooking more than 4 potatoes, extend the cooking time by up to 15 minutes.
