Breakfast Skillet

Ingredients:

  • 6 Tablespoons oil
  • 1 pound frozen southern (cubed) hashbrowns
  • onion powder
  • seasoning salt
  • 6 eggs
  • 2/3 cup diced ham
  • 1 cup shredded cheddar cheese (optional)

Directions:

  1. Heat oil in a skillet over medium-high heat.
  2. Add hashbrowns carefully and spread to an even layer.  Sprinkle with onion powder and seasoning salt and let sit about 9-10 minutes.
  3. Flip/stir hashbrowns, then break eggs onto potatoes and add ham.  Stir while cooking until eggs are cooked (but not super dry).
  4. Serve topped with cheese if desired.
