Ingredients:
- 6 Tablespoons oil
- 1 pound frozen southern (cubed) hashbrowns
- onion powder
- seasoning salt
- 6 eggs
- 2/3 cup diced ham
- 1 cup shredded cheddar cheese (optional)
Directions:
- Heat oil in a skillet over medium-high heat.
- Add hashbrowns carefully and spread to an even layer. Sprinkle with onion powder and seasoning salt and let sit about 9-10 minutes.
- Flip/stir hashbrowns, then break eggs onto potatoes and add ham. Stir while cooking until eggs are cooked (but not super dry).
- Serve topped with cheese if desired.
