Pancakes

Ingredients:
  • 3 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 Tablespoon baking powder
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1/4 cup vegetable oil
  • 2 eggs
  • 3 cups buttermilk, or 3 Tablespoons lemon juice + enough milk to make 3 cups
  • water
  • cooking spray
  • butter or margarine
  • syrup
Directions:
  1. Preheat griddle to 350 degrees or a non-stick skillet to medium heat.
  2. Combine flour, sugar, baking powder, baking soda, salt, oil, eggs and buttermilk in a mixing bowl and whisk until well blended.  Add water if needed to reach the desired consistency.
  3. Pour by 1/4 cupfuls onto greased griddle and let sit until edges appear dry.  Flip each pancake and let sit until browned.
  4. Serve with butter and syrup.
