Ingredients:
- 3 green plantains
- vegetable oil
- garlic powder
- salt
- Slice the peeled plantains diagonally into 1 inch slices.
- Fry the slices over medium heat until they soften. Remove from oil and drain on paper towels.
- Using a press, slightly mash each piece to about half an inch in thickness. Dip each piece in warm salted water and fry again until crispy. Remove from the oil and drain on paper towels. Salt them.
- Peeling the plantains is difficult. I slice the green peel and then pry the peel open with a knife.
- I soak the sliced plantains in water sprinkled with adobo salt before putting them in to fry the first time. I don't dip them in water between fryings.
- 1 plantain is enough for at least 2 people.
