Ingredients:
- 4 chicken breasts
- 8 ounces bottled Russian dressing
- 10 ounces jarred apricot jam
- 1 envelope dry onion soup mix
- 1 green pepper, cut into chunks
- 3 cups rice
- cooking spray
- Prepare rice according to package directions.
- Preheat oven to 350 degrees. Grease casserole dish or slow cooker with cooking spray.
- Place chicken in bottom of dish.
- In a separate bowl, mix dressing, jam and onion soup and pour over the chicken.
- Bake for 1 hour 10 minutes or in slow cooker on low for 4 hours.
- Add green pepper, then bake another 15-20 minutes or cook in slow cooker on low another hour. Serve over rice.
