Russian Chicken

Ingredients:
  • 4 chicken breasts
  • 8 ounces bottled Russian dressing
  • 10 ounces jarred apricot jam
  • 1 envelope dry onion soup mix
  • 1 green pepper, cut into chunks
  • 3 cups rice
  • cooking spray
Directions:
  1. Prepare rice according to package directions.
  2. Preheat oven to 350 degrees.  Grease casserole dish or slow cooker with cooking spray.
  3. Place chicken in bottom of dish.
  4. In a separate bowl, mix dressing, jam and onion soup and pour over the chicken.
  5. Bake for 1 hour 10 minutes or in slow cooker on low for 4 hours.
  6. Add green pepper, then bake another 15-20 minutes or cook in slow cooker on low another hour.  Serve over rice.
