Peanut Butter Texas Sheet Cake

Ingredients:

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup water
  • 1 cup (2 sticks) + 1/2 cup (1 stick) butter or margarine, softened
  • 1/2 cup + 1/2 cup peanut butter
  • 2 eggs
  • 1/2 cup buttermilk (or 1/2 Tablespoon white vinegar + enough milk to make 1/2 cup set aside for 5 min)
  • 1 teaspoon + 1 teaspoon vanilla extract
  • 6 Tablespoons milk
  • 4 cups powdered sugar
Directions:
  1. Preheat oven to 350 degrees.  Grease 10"x15" cookie sheet with cooking spray.
  2. In a large bowl, whisk together flour, granulated sugar, baking soda and salt and set aside.
  3. Combine water and 1 cup butter in saucepan and bring to a boil.  Remove from heat and stir in 1/2 cup peanut butter until well blended.  Pour onto flour mixture and blend well.
  4. In a separate bowl, beat together the eggs, buttermilk and 1 teaspoon vanilla.  Pour into flour mixture and bland well.
  5. Pour the batter onto cookie sheet, spread evenly and bake for 20 minutes.  Test with toothpick; when inserted near center comes out clean.
  6. Bring 1/2 cup butter, 1/2 cup peanut butter and milk to a boil in a large saucepan.  Remove from heat and add 1 teaspoon vanilla.  Beat in powdered sugar with electric mixer.  Frost cake while icing is hot and cake is warm.
